I’ve seen these rainbow fruit trays on Pinterest and been wanting to make one forever!
I’ve also been wanting to prep all my meals for lunch at work on Sunday, so this weekend I bought a ton of fruits and veggies and spent a few hours cutting, chopping and bagging. I bought a whole fresh pineapple, fresh mango, blueberries, strawberries, grapes, raspberries, blackberries and a coconut.
I made this super fun rainbow fruit tray for us to munch on during the Super Bowl and I made a fruit salad with the remainder.
I also cut up celery and red bell peppers because they are super easy to bring along to work and snack on.
The coconut, was NOT easy to open though. Thank goodness my husband broke out the power tools and drilled a whole in the coconut and cracked it open with a hammer. I don’t think I would have been able to do it!
I’m going to make smoothie bowls this week for breakfast and add some of this fresh fruit on top. I really need the extra vitamin C as we enter into these nasty flu season.
